Fatayers are soft yummy pies filled with beef that come from the Mediterranean cuisine. They are light and healthy, and are favorite for meat lovers. You can have them as an appetizer or a snack. They are also great made ahead snacks!
Fatayers are filled with whole wheat carbohydrates that will keep you full for a long period of time. The meat filling is a great source of protein. It also provides many important nutrients such as iron, zinc, and B vitamins. It is also abundant in “organosulfur compounds” which have been shown to possess antioxidant properties that make them protective against health conditions such as heart disease and cancer. However, the full health benefits of this recipe could be achieved by supplementing the main ingredients with healthier ones. For example, Fatayers are usually made with white flour, vegetable oil and butter. However, I have substituted these ingredients with organic brown flour and organic unbleached white flour, olive oil and coconut sugar.
The organic brown and white flour are a better alternative because they have low sodium contents and have better dietary fibers. Sodium (salt) is key for the control of blood pressure. When we consume more sodium than our bodies can handle then our bodies become toxic. The kidneys become overwhelmed and are unable to function well; which leads to kidney disease.
Olive oil is better because it has lower fat rate and has no cholesterol. It reduces the risk of hypertension, heart attacks and diabetes. Coconut sugar is better than white sugar, because it does not cause fluctuating blood sugar levels. Overtime, frequent fluctuation of blood sugars can cause diabetes, obesity and mood instability.

Preparations for the Dough:
Knead the dough with all the ingredients using warm water and then cover and set aside for about an hour or until it doubles in size. Once the dough is well risen, punch it down and divide it into 18-20 equal sized pieces. Shape them into balls, set them aside to rest for 15 minutes, make sure you keep them covered!
Shaping the Fatayer:
You can shape the Fatayer any way you like. I will share with you the way that I shaped mine. After dividing the dough into 18-20 small circles. Flatten the dough (1cm thick) into small circles and place 1 1/2 tablespoon of the filling into the center of the dough circle. Place the meat mix in the center and begin by pinching in the sides. Pinch one side and then another and another till you reached a star shape, or even more a diamond shape.
One of the best things about this recipe is that you can be as creative as you want. Feel free to make any shape or size! There is no right or wrong way to do this. If you want you can put sesame seeds on the Fatayer right before you bake them. Serve with ketchup or hot sauce and enjoy!
