Tabbouleh Salad with Grilled Chicken

Tabbouleh is a well-known Mediterranean salad traditionally made of whole wheat bulgur, tomatoes, cucumbers, finely chopped parsley, garlic, lemon juice, and salt; all seasoned with olive oil. This dish contains nutrients essential for healthy moms. It high in fiber and protein, low in fat, low glycemic index and it’s a great source of iron. It contains manganese which aids metabolism, calcium for healthy bones, and potassium for heart health and vitamin A for eye health.  The grilled chicken is made from skinless and boneless chicken breast which is lean and a great source of protein. The chicken breast adds to the dish a significant amount of omega-3 fatty acids which are also essential for healthy body. For optimal benefits, organic ingredients should be used to prepare this dish.

Ingredients for Tabbouleh:
  • 1 large bunch of parsley, chopped
  • 1 cucumber, peeled and diced
  • Roma tomatoes, diced
  • 1 small red or yellow onion, chopped
  • 2 cloves of garlic, diced
  • Whole Wheat Bulgur
  • 2 tablespoons of Olive Oil
  • Fresh lemon juice of one lemon
  • Salt (to taste)- Optional

Directions:
1. Finely chop the onion and pour the salt over the onion, mixing them well.
2. Meanwhile, soak the bulgur in warm water for 1 hour and squeeze out the excess water.
3. Chop/dice the rest of the ingredients and spray with olive oil.
4. Toss Well and Enjoy! Yummy!

Ingredients for Grilled Chicken:
3 medium sized chicken breast (skinless and boneless)
3 cloves of garlic
3 tablespoons of olive oil
1 teaspoon of salt ( add more or less if you like)
1 tablespoon of tandoori powder
3 teaspoons of curry powder
1 tablespoon of black pepper
1 teaspoon of hot chilli pepper (optional)
½ fresh lemon juice
¼ cup of cilantro finely chop

Directions:
  1. Add the chicken and all the ingredients in a mixing bowl.
  2. Massage all the ingredients together thoroughly.
  3. Marinate for 1 hour in the fridge (overnight is best)
  4. Add 2 tablespoons of olive oil in a non-stick pan at medium heat.
  5. Add the chicken slowly.
  6. Cook on each side for about 4-6 minutes.
  7. Place chicken on a paper towel to drain any excess oil and serve with Tabbouleh Salad and lemon wedges.
