Total Time: 25 minutes
2 cups organic frozen vegetable mix (peas, green beans, corn, & carrots)
1 tablespoon dried thyme
1 teaspoon apple cider vinegar
Phresh salt (or any other salt) & black pepper
3 tablespoons of coconut oil for cooking
1. Heat oil in the pan and cook veggies until tender.
2. Stir in other ingredients and enjoy.
Benefits: Vegan, simple, easy to make, light and filling, colorful, yummy.
*Serve with Cheesy Quinoa, or any other grain or pasta.
