"I was craving a sandwich badly. The kind of sandwich you'd get from a deli loaded with meat, cheese, & mayo. the problem is, I don't eat like that anymore. Unless I'm really flying off the handle I pretty much steer clear of processed meats. I created this recipe as an alternative. I'm not saying your every day person is going to take this as a replacement for a colt cut hoagie, but it works for me. The juiciness of the tomato mixed with the creamy texture of the mashed avocado on bread did the trick. I liked using the kale leaf in place of lettuce on the sandwich as well. Now I know what to eat whenever I'm craving a big sandwich." - Salvatore Fiteni
Total Time: 10 minutes
2 slices of toasted sprouted wheat bread (or bread of choice)
1/2 avocado mashed
1 kale leaf (torn off of stem)
Sprinkle of salt & pepper
Optional: splash of apple cider vinegar
1. Toast bread
2. Mash 1/2 an avocado
3. Spread avocado mash onto each slice of toasted bread
4. Slice tomato into circular pieces
5. Put tomato on one side of the bread
6. Sprinkle salt & pepper onto both sides
7. Place kale lead on top, splash the apple cider vinegar onto the leaf
8. Close the sandwich and slice it in half
