"It seems like nearly every culture has a version of this salad. Tomatoes and cucumber are some of the most popularly grown produce in the world. When you can get good, small tomatoes, this salad is extra special. If tomatoes are not in season, up the ante with the herbs because they impart so much flavor and freshness to this salad. The acid apple cider vinegar acts to highlight the already delicious flavor of the herbs and veggies, making this salad even more sensational. Eating this is a great way to rehydrate if you're feeling dry." Chef Hannah Gruber
