5 minute Almond Milk

Total making time: 5 minutes

Serves: 2 
(3 cups of almond milk)

Ingredients:
1 cup of raw almonds
3 cups of water
3 pitted dates

Action:
1. In a powerful blender like the VITAMIX blend all ingredients for four minutes or until smooth and crisp, light and creamy. 
2. Ready to drink! 

Suggestions:
+ Add 2 teaspoons of pure vanilla extract and a pinch of salt for Vanilla Almond Milk
+ Add 2 cups of strawberries and more dates for a sweet Strawberry Milk!
+ Add 4 teaspoons of cacao powder and 3 more dates for a sweet Chocolate Milk!
+ Add chilled water or ice for a cooler milk!

Tips:
+ If you want a smoother milk, soak the almonds for at least 4 hours in water, then pop their skins off before putting them in the blender! 
+ If you do not have a powerful blender you may end up with chunks in your milk.
+ If you want a nut free version, use sunflower seeds or hemp seeds.

Blueberry Ice Cream Bites with Chocolate Tops (Raw & Vegan)

Total making time: 20 minutes 
(plus 4 hours soaking time, 3 hours freezing time)

Serves: 15-20 ice creams 
(1 heaped tablespoon each - 3cm cups)

Ingredients:
Ice Cream:
1 1/2 cups of cashews soaked for 4 hours
1 small lemon
3/4 cup blueberries
1/2 cup of maple syrup
1/4 cup extra virgin coconut oil
1 tablespoon of pure vanilla extract
Dash of salt
Frosting:
2/3 cup cacao powder
1/2 cup maple syrup
1/4 cup extra virgin coconut oil

Action:
1. In a powerful blender like a VITAMIX, add all ingredients for the ice cream part. Squeeze them lemon in the blender, don't blend the peel. Blend on high speed for at least 5 minutes until the mixture is completely smooth and thick and creamy. Scoop out a heaped teaspoon of the ice cream mixture and place on non-stick baking paper and place in the freezer to set.
2. While the ice cream is setting, make the frosting. Add all 3 ingredients to the blender and mix for a couple of minutes until the frosting is smooth, thick and creamy. Take the ice creams out of the freezer and place a dollop of the icing on each ice cream. Finish with a blueberry on each and put back in the freezer to set for a few hours! Then eat!

Tips:
+ For nut allergies replace the cashews with sunflower seeds or hemp seeds
+ For vegan use maple syrup
+ For raw use raw honey

Meat Balls (Vegan, Raw, Plant Based)

Total making time: 10 minutes

Serves: Makes 2 1/2 cups - 10-20 balls

Ingredients:
1 1/2 cup walnuts
1 cup sundried tomatoes
1 tablespoon sage
1 teaspoon of fennel seed
½ teaspoon of thyme
½ teaspoon of rosemary
½ teaspoon of marjoram
Pinch black pepper
Pinch cayenne pepper
Pinch of himalayan salt


Action: 
1. Put all ingredients in food processor like the VITAMIX and blend until well combined. The consistency should be thick.
2. Roll into balls! 
3. Eat!

Tips:
+ These make a great party food! Serve them on a platter with TED KETCHUP! 
+ Serve these with zuchinni pasta for a complete pasta and meatballs meal! Recipe here. 
+ Try this recipe with soaking the walnuts for 4 hours so they create a really soft moist plump meatball.
+ For nut allergies, use sunflower seeds or hemp seeds instead of walnuts.

Chocolate Blueberry Smoothie

Serves: One

Ingredients:
2 tablespoons of Cacao Powder
1 cup Blue Berries 
1 1/2 cups of water 
5 pitted dates

Tips:
+ Add ice or freeze the blueberries to make a chilled smoothie.
+ Choose an alternative sweetner to the dates, either use 1/4 cup coconut sugar, 1/4 cup Maple Syrup 
or 1/4 cup Raw Honey.
+ Add more cacao powder if you like it more chocolate tasting.
+ Add more blueberries for a thicker smoothie. Add more water for a smoother smoothie.
+ Add 1 tablespoon of acai berry powder for more superfood power!

Action:
1. Mix all ingredients in a power blender like the VITAMIX until a smoothie consistency. 
2. Drink!

Strawberry Ice Cream (Raw & Vegan)

Total making time: 15 minutes (5 hours setting in freezer)

Serves: 4-6 

Ingredients:
Strawberry ice cream:
2 cups raw cashews (soaked for 4 hours)
1 1/2 cup strawberries
1 cup almond milk or hemp milk or other nut milk
3/4 cup maple syrup or raw honey
2 tablespoons of vanilla extract 
1/2 teaspoon salt
1/3 cup of coconut oil 
Strawberry sauce:
1/4 cup strawberries
1/2 cup maple syrup

Action:
1. Mix all ingredients for the ice cream in a blender like the VITAMIX for a few minutes until a smooth creamy consistency is achieved. Pour into ice cream mold and place in freezer for 5 hours to set.
2. Mix all ingredients for the sauce in a blender until smooth. Pour on ice cream when ready!

Smooth Chocolate Fudge

Serves: 2 people (Makes 1 - 1.5 cup of sauce)

Ingredients:
1/2 cup maple syrup
1/4 cup coconut oil
2/3 cup cacao powder

Action:
1. Add all ingredients to a blender like the VITAMIX and blend for a couple minutes until a smooth consistency is achieved! 
2. Now it is ready to eat! 

Here is what you could do with it:
1. Pour it into glass molds or paper cup cakes and set in the freezer for 30 minutes for a thick soft fudge. 2. Eat it right away as it is! mmm
3. Dip fruit in it!
4. Use it as a topping for nut ice cream!
5. Use it as a topping for raw cheesecake.
6. Use it as a topping for other desserts.
