Serves: 8-16 Total time: 1 hour prep/ 24 hr nut soaking Ingredients: 4 cups of cashews soaked for 24hr 1 large lemon 1 cup of maple syrup 1 tablespoon of vanilla extract 2 cups of Walnuts 2 1/2 tablespoons of cacao powder Action: 1. In Vitamix or powerful blender, blend together cashews and maple syrup. Once fairly blended, squeeze one large lemon in and add the vanilla extract and blend on high until creamy. 2. Place walnuts into bottom of freezable cake dish. Pour half of the cheese cake mix on top of walnuts. 3. Take remaining half of blended cashews, add cacao powder and mix thoroughly. 4.
