Total Time: 30 minutes
1 clove garlic
1 cup macadamia nuts
2 cups basil, stemmed & washed
1/2 of a lemon
1 Tablespoon mellow white miso paste (or 1 teaspoon salt)
1 Tablespoon nutritional yeast
2 Tablespoons olive oil
(2 Tablespoons water as necessary)
Sauteed Veggies (Your choice of quantity!)
1 Tablespoon olive oil to saute
Zucchini, sliced into rounds
Red bell pepper, cut into strips
1/4 cup water
Garnish with fresh dill
Mauk Family Farms Raw Mineral Crusts (or any Organic, natural crackers of your choice)
1. Make the macadamia pesto. Add all ingredients to a food processor, process until smooth. Set aside.
2. Saute the veggies. Add olive oil and onion to a frying pan, saute for 1-2 minutes. Then add the zucchini, red pepper and water. Saute until tender.
3. Assemble your crackers! Spread pesto evenly over the crackers. Top with sauteed veggies and garnish with fresh dill. Enjoy!
