2 tablespoons coconut oil, for cooking
2 pieces of organic bread
2 large eggs Salt and pepper, to taste


  • Heat the oil in a frying pan on medium-high. Toast two pieces of bread, but just a little, not golden brown. Then cut two holes into each piece of toast; you can use a small glass to do this.
  • Place the toast in the frying pan, and crack one egg into each hole. If you don’t want runny yolks, then poke a fork in the yolks. Flip once. Serve with salt and pepper to taste.


  • Avocado goes great with this!


  • Cheesy Eggs in a Hole: Sprinkle 1½ tablespoons nutritional yeast over each egg.
