Thai Salad

This recipe is great with or without shrimp.

INGREDIENTS

Salad:
1 tablespoon coconut oil (for cooking shrimp)
1 pound shrimp, peeled and deveined (optional)
4 cups mixed greens
½ cup fresh bean sprouts
1 slice of red onion
1 tablespoon fresh mint leaves
2 tablespoons fresh cilantro leaves
4 cherry tomatoes, quartered
4 teaspoons dry roasted peanuts
1 lime

Dressing:
2 tablespoons rice vinegar
1 tablespoon green onions, chopped
1 tablespoon peanut butter
1 tablespoon amino acids, like Bragg Liquid Aminos or soy sauce
1 teaspoon ginger, peeled and grated Dash of cayenne pepper
1 teaspoon sesame oil
