Chocolate-Caramel Dessert Squares (Raw & Vegan)
Makes 13 cups
Ingredients:
Base layer

2 Tbsp. coconut oil

1 tsp. vanilla extract

1/4 tsp. Redmond Real Salt

1 cup walnuts
-
2 cups dates
Caramel layer
-
1/4 cup maple syrup
-
1/4 cup almond butter or SunButter Sunflower Butter

1/3 cup coconut oil
-
1 tsp. vanilla extract
-
1/4 tsp. salt
-
1/4 cup dates, seeded
-
1/4 cup raw unsalted macadamia nuts
-
1 Tbsp. sesame seeds
Chocolate layer
-
1/2 cup maple syrup
-
1/4 cup extra virgin coconut oil
Ingredients:
- Grease 8”x8” square pan with coconut oil.
- To make base layer: In food processor, add all ingredients and blend until wet, chunky mixture forms. Press firmly into the bottom of greased pan.
- To make caramel layer: In food processor, blend dates, macadamia nuts and sesame seeds until well combined and smooth. In small pan, combine blended mixture with remaining ingredients and cook over medium-low heat. Whisk together until completely melted. Pour over bottom layer in pan and refrigerate to set.
- To make chocolate layer: In medium bowl, combine all ingredients and whip until smooth (use blender, if preferred). Pour over caramel layer and freeze for 20 minutes to set.
