Black Forest & Chia Seed Parfait (Vegan & Gluten-Free)

Servings: 4

Ingredients:

Chia seed layer

Whipped coconut cream layer

  • 1 can coconut cream, left in fridge overnight (or 2 frozen bananas)

Chocolate avocado mousse layer

 Instructions:
  1. In two jars, divide ingredients for chia seed layer; let soak.
  2. Without shaking, open coconut cream. Scoop out top layer, leaving behind any residual liquid. In large bowl, use electric mixer to mix coconut cream until smooth and frothy. (Note: if using frozen banana, beat until smooth like gelato). Spoon cream over chia seed layer in each jar.
  3. Chop 6 cherries and place on top of the coconut cream layer.
  4. In blender, process ingredients for mousse layer until completely smooth and creamy. Pour on top of cherries. Garnish with remaining cherries and grated chocolate.
