- In bowl, combine carrot and beet.
- In small bowl, combine dressing ingredients and stir until completely smooth and creamy.
- Pour dressing over salad; toss.

- 1 organic carrot, grated
- 1 organic beet, grated
- Optional garnish: fresh basil or mint
- Optional: Redmond Garlic Salt, to taste
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. Sunbutter Sunflower Butter
