Vegan Eggplant Pizza Bites

Ingredients:
  • 1 medium eggplant cut into ¼” slices
  • 1 tsp. Redmond Real Salt
  • 3 tsp. minced garlic
  • 2 Tbsp. olive oil
  • 2 Tbsp. Italian seasoning
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1 cup Organicville Organic Pizza Sauce
  • 1 cup shredded vegan mozzarella cheese
  • 1/4 cup tomatoes sliced
  • 1/4 cup fresh basil
 Instructions:
  1. Preheat oven to 400 degrees F.
  2. On paper towels, arrange eggplant slices. Thoroughly sprinkle salt over each. Let sit 15 minutes, then wipe away moisture.
  3. In small bowl, combine minced garlic, olive oil, Italian seasoning, basil and oregano. Brush over each eggplant slice; bake 15 minutes.
  4. Flip slices, top with a tablespoon pizza sauce, a slice of tomato and a sprinkle of cheese. Continue to bake another 10 minutes, or until cheese is fully melted.
  5. Garnish with fresh basil.
