A Day of Eating- Busy MondayApr 06, 2021
After a relaxing weekend, I was ready to get back to work and definitely kept myself well fueled while doing so. Breakfast was porridge yet again- you should seriously check it out in my Anxiety Free With Food book!
For lunch, I had buffalo cauliflower over an arugula, quinoa, avocado, and cucumber salad made by @plantbasedpost- you can find the recipe on her Instagram page! I had my favorite Primal Kitchen Balsamic Dressing on the salad.
After lunch while doing work, I enjoyed a green juice and chocolate Sunbutter crunch bars- the perfect late afternoon pick-me-up!
Later in the day, I finished setting up my rooftop garden- I love seeing it come all together and the views from the rooftop were beautiful! I'll be sure to keep you updated on what we end up growing. Then, for dinner we enjoyed Explore Cuisine Chickpea Fusilli with wild salmon and had some Volley Organic Tequila. As you probably know, this is my go-to for alcoholic drinks because I trust the ingredients and quality!
