A Day of Eating- Monday Meal PrepApr 15, 2021
After a relaxing birthday weekend, I was ready to get back to work. Started the day with a fueling superfood smoothie and Anxiety Free Supplements, as always. I also had some Pique Matcha to help tackle all of my morning tasks.
In anticipation of the busy week ahead, I decided to do some meal prepping and made Explore Cuisine spaghetti and meatballs, using Force of Nature ground bison; lemon herb salmon; rice paper rolls; and some buffalo drumsticks and chicken wings, using Cooks Venture Chicken. These are my favorite brands for sustainable, high-quality meat options!
After meal prepping, I went for a walk around UVA grounds and picked up a Juice Laundry smoothie bowl. You can't go wrong at The Juice Laundry- all of their ingredients are 100% organic and I love everything their company stands for. They truly care about health and sustainability and are even transparent with their pricing! It was the perfect weather for a smoothie bowl and stroll by the Rotunda.
For dinner I had some of the spaghetti and meatballs I prepped earlier in the day- it's amazing how helpful meal prepping can be on busy days! Such a time saver!
