A day of eating on The Earth Diet: Fasted until 11:30 for a smoothie bowl, Chocolate Sunbutter Cups for a snack, Lunch Edamame Ramen, Dinner Explore Cuisine Rice Noodles with Soup, all plant-based today!
Apr 27, 2021Today I fasted until 11:30 and then went to my favorite local juice spot, The Juice Laundry for a smoothie bowl.
Later in the afternoon for a snack, I had a Chocolate Sunbutter Cup. These are so easy to make- you just melt the Hu Kitchen chocolate, pour it into a mold, add the Sunbutter, and pour more chocolate on top then stick in the fridge or freezer! You can find the full recipe here. Sunbutter is highly nutritious and makes a great replacement for nut butter if you have an allergy. A delicious and nutritious snack ready in under an hour.
For lunch, I had Edamame Ramen using Explore Cuisine's Edamame Ramen noodles. Explore Cuisine is made purely from plants, so it is gluten-free and vegan. I enjoy including it in my meals for an extra protein boost! Plus, the flavor and texture of the pasta is so delicious and it tastes like you are eating regular pasta, but even better!
After lunch, I went on a walk by the river, it was such a beautiful day! With Spring in full effect, all of the bright flowers are blooming. Everything is so pretty!
I also saw this Meatless Monday sign on my walk which was appropriate since I was participating in Meatless Monday.
For dinner, I had Explore Cuisine Red Rice noodles and a vegetable soup. This meal was simple and delicious, the perfect way to end a day of all plant-based nutrients! I felt so energized and content all day.
