A Day of Eating- Starting Off the WeekendMar 29, 2021
Friday started off with a lot of work to wrap up a busy week, but ended with a round of golf to get the weekend started! All of my meals were freshly made at home and kept me fueled for a day full of calls and content creation, as well as fun outdoor activities. See below for a day full of unique, nourishing meals to add to your list of recipes to try out!
I woke up and started my work with a super tasty smoothie in hand. It was a great balance of antioxidants and natural sugars from the fruit, greens, protein, and healthy fats, and it kept me fueled throughout the morning. It was made extra creamy using my favorite Sproud dairy-free pea milk.
After getting some work done, I had rice paper rolls with the most vibrant honey and chili Sunbutter sauce. The warmer weather in Charlottesville has me excited for spring here, and these rice paper rolls are the perfect meal or snack for a sunny spring or summer afternoon! I also received some beautiful flowers from a friend, which only enhanced the excitement that comes with the beginning of spring.
After lunch I continued to complete some work and then headed to the golf course with friends to get outside, enjoy the weather, and get the weekend started. I brought along some of my favorites: my new Anxiety-Free Supplement, a Volley Tropical Mango Spiked Seltzer, and of course some Sunbutter. This was the perfect end to a busy afternoon, especially since the weather was so nice!
After golf, we had creamy salmon lasagna using Explore Cuisine's Organic Green Lentil Lasagna Sheets. This was such a fun recipe and came out great! The cauliflower cheese sauce using Monty's Dairy Free Cream Cheese was super creamy and paired perfectly with the salmon, putting a twist on traditional lasagna. We paired it with some greens tossed in Primal Kitchen Balsamic Vinaigrette. This is a must-try for sure!
It was a long day of work, but the weather was beautiful, and I was glad to be able to wind down with a round of golf in good company. Stay tuned for more "A Day of Eating" posts soon!
