A Day of Eating- Superfood ThursdayApr 02, 2021
Started off my Thursday with a delicious superfood smoothie, which included a spoonful of Sunbutter as always! I also added in flax, hemp, and chia for extra omegas, fiber, and protein. Already feeling great cutting out added sugars.
Lunch was more rice paper rolls (they're seriously so easy and good- especially paired with Bragg Liquid Aminos!) and Explore Cuisine pasta with veggies and chicken that I prepped earlier in the week. I also enjoyed these with some homemade beet juice that I made using my juicer for even more nutrients and a nut-free nougat bar.
We had a friend over for dinner, so naturally, Explore Cuisine lasagna was in the cards! I love their pasta options because they're gluten free and packed with veggies and a good amount of protein, to ensure you're getting nutritional value from one of everyone's favorite dishes: pasta! To make this delicious lasagna, I layered Explore Cuisine Lasagna Sheets, tomato sauce, a vegan cauliflower "cheese" sauce featuring Monty's Cashew Cream Cheese, and Force of Nature Ground Bison. I also added some shredded vegan mozzarella to one half and organic mozzarella to the other- so yum! If you want to impress dinner guests without too much preparation required, definitely try out Explore Cuisine's Lasagna Sheets and make this recipe! We had ours with a side salad and some Primal Kitchen Balsamic Dressing.
