I am back in Virginia now and had a fantastic start to the week!!
I made a breakfast wrap this morning to start my day off right. I used turkey bacon and added spinach to my eggs for some greens in my breakfast.
Surprise! I got my green bowl from The Juice Laundry again!! The Juice Laundry is a local, organic, plant-based smoothie shop here in Charlottesville. I got my usual Coco Verde bowl, which is made with kale, spinach, mango, coconut oil, banana, dates, and coconut water and I added their Chocolate Shake to my smoothie bowl this time. The chocolate shake is one of their nut milks made with almonds, dates, cocoa, and pink salt.
I had a great week in the garden and have been using Neem Oil to help! Neem oil is for organic use and helps control blackspot, powdery mildew, rust, spider mites, aphids, whiteflies, and other pests in gardens.
I wanted to share some of my favorite snacks this week! First, the cacao wafers from Imlak'esh Organics are organic, vegan, non-GMO, gluten-free, dairy-free, and soy-free! I received the best package from Cappellos filled with their new Almond flour pasta ravioli and Almond flour cookie dough!! I cannot wait to try all the other flavors because the Five Cheese Ravioli was AMAZING! Capello's is a fantastic gluten-free and grain-free brand that makes the yummiest pizzas, pasta, and even cookie doughs!
When I got back from NYC, I decided to pick up Monsoon Siam from downtown Charlottesville. Monsoon Siam is amazing Thai food and I decided to get the veggie green curry and paired it with some organic wine.
For dinner tonight I made homemade burgers and fries, so yummy and easy! On top of my burger, I added vegan cheese, avocado, and lettuce from my garden!!
On Sunday I had the opportunity to visit Gables Run Farm just outside of Charlottesville and see the honey bees in person. Local, raw honey contains a blend of local pollen, which helps to strengthen your immune system and potentially reduce someone's pollen allergies. I am loving spring in Charlottesville!! The flowers are blooming and so pretty and perfect weather for running. I have been starting some of my mornings with the Prolyfyck Run Crew and have been having so much fun!
