Food Journal for Monday: Porridge, Green Juice, Wild Tuna, Meal Prep for the Week, Anxiety-Free Supplements and Coconut Bliss Ice Cream!

Monday was a busy day with lots of meal prep and lots of great recipes!

 

Started my morning with some green juice, made with celery, ginger, lemons, cucumbers, broccoli sprouts, carrots, and grapefruit!! It is so yummy and if green juice is too bitter for you, an easy sweet fix is adding orange juice. With my green juice, I had Liana's Organics Anxiety-Free Supplement. I love starting my day with this supplement because it not only supports focus and mood balance, it also promotes nervous and immune system support. Also, a great addition to the morning is porridge, which I love to top with chia seeds, hemp hearts, flax seeds, and honey.

Once I ate my breakfast, I began my meal prep for the week! I made 4 days worth of Overnight Oats from Anxiety-Free with Food: Natural, Science-Backed Strategies to Relieve Stress and Support Your Mental Health, which I topped with almonds, pumpkin seeds, cashews, walnuts, raspberries, blueberries, blackberries, and Sunbutter! Sunbutter is an awesome alternative to peanut butter or other kinds of butter because it has 7grams of plant-based protein, organic, GMO-free, and is made exclusively from sunflower seeds.

The next thing I prepped was my almond flour-crusted chicken recipe that is in my Anxiety-Free with Food: Natural, Science-Backed Strategies to Relieve Stress and Support Your Mental Health book. I added wild basil, an Australian favorite to the batter and I paired the chicken with some quinoa and green beans. Quinoa is a high-fiber plant-based source of protein, and the green beans provide a great source of calcium and vitamin K. 

Next, I prepped Tuna Salad using this Albacore Wild Tuna, mayonnaise, diced carrots, diced celery, dijon mustard, and salt. Tuna is a great source of vitamin B12, helps lower risk of heart disease, aids in vision problems, reduced risks of cancer, and helps with weight loss. It is important to choose wild tuna, as opposed to farm raised because the wild tuna eat a natural diet and are slightly lower in saturated fat. Another dish I prepped today was chicken enchiladas. These were so easy and awesome for meal prep. 

I could not forget about dessert... I had ice cream from Coconut Bliss, a plant-based and organic ice cream! The dessert is made from a coconut milk base and recently changed their ingredients from agave as the sweetener to only sweetened with coconut sugar and coconut syrup and NO refined sugar!! I cannot wait to try all the flavors!
