My Superfood Birthday Cake From Courtney's Cookies in Miami

My birthday was this past week and I couldn't let it go by without celebrating with friends and some epic cake! 

My superfood birthday cake this year was organic and made with all natural nutrient rich ingredients with a base of tiger nut flour from Courtney's Cookies! I had a cookie cake! Custom made with vanilla lavender and chocolate chip combined into one.

Courtney is a health coach who started her business making cookies in 2016. When we met six years ago, I told her that there were NO cookies on the market with tiger nut flour! Tiger nut flour is incredibly healthy. It’s a root vegetable, gluten-free, and has pre-biotic starch.

I am so grateful her business exists because her cookies have been my go-to for years! Her business is based in Miami, are available in Florida stores, and they ship nation wide. You can find her every Saturday at Coconut Grove Farmers Market from 10:30am - 6:30pm.

She also makes custom cookie cakes and vegan ice cream sandwiches too. The ice cream is made with coconut milk. Truly divine!

I really recommend you try these cookies and the custom cookie cake for an amazing healthy but delicious experience! I ended up taking it to Carbone for dessert and my friends all loved it. They couldn’t believe it was healthy! Even my boyfriend loved it!

Courtney grew up baking “traditional” cookies but once she became gluten-free and a holistic health coach (including an Earth Diet coach) she wanted to recreate the cookies she grew up baking but with a healthy twist. 

They are just absolutely so delicious, AND also healthy, a win-win! I am so grateful for this beautiful cake that many of my friends and boyfriend got to enjoy on my birthday. Here's to another year older!
