May 02, 2021This past week I have been baking healthy sweets, great meals, and enjoying Charlottesville's amazing spring weather.
For breakfasts, I have been loving this granola cereal topped with raspberries and blackberries. Blackberries and raspberries provide a great source of antioxidants and other nutrients, along with many other benefits.
If I am not having a smoothie for breakfast or a snack, I love to stop by one of my favorite Charlottesville restaurants, The Juice Laundry. The Juice Laundry is a 100% organic, plant-based restaurant that has everything from cold-pressed juices, vegan chili, to smoothie bowls. A personal favorite is their Coco Verde smoothie bowl.
One night for dinner I made salmon with broccoli and wild rice. Salmon is a great source of Omega-3 Fatty acids and protein and broccoli is also a great source of protein, fiber, and vitamins A, C, E, K, and B. Another favorite meal was ramen with added carrots and celery. For another dinner of the week, I made gluten-free chickpea spaghetti from Explore Cuisine with my cauliflower cheese recipe made with Monty's Cashew cream cheese and added turkey bacon and peas! I love using Explore Cuisine because they integrate beans, peas, rice, and lentils into their products to make nutritional and delicious food. Lastly, I made a Mediterranean quinoa salad, which is a great source of protein and a perfect lunch dish.
At Whole Foods, they offer farm-raised bay scallops and wild-caught sea scallops. While the farm-raised scallops are much cheaper in cost, the wild-caught sea scallops are so much better in taste and nutritional benefits. Scallops provide a low fat and high protein source for meals.
As for sweets, I made the perfect chocolate mug cake, power balls, date caramel, and nut bark. I love using Hu Dark Chocolate Gems, they are perfect for baking and snacking. Another favorite of mine is my Smart Cookie Recipe, which only takes 10 minutes and so good!!!
Some other things I have been snacking on this week are my Chia Seed Cereal, Fresh Spring Rolls, clusterbucks, and my Flax Milk. The Chia Seed Cereal is awesome for breakfast and so easy to add whatever topping you want, for example, I added raspberries, blackberries, and almonds. The Fresh Spring Rolls are great for meals or a snack! While I used liquid aminos this time, my recipe calls for Sunbutter normally. Sunbutter is a favorite, I use the Organic sunflower butter that contains no hydrogenated oil or added sugars and salts. It is natural, simple, and delicious with 7 grams of protein per serving. However, liquid aminos are a great alternative to soy sauce because it is naturally gluten-free, a milder taste than soy sauce, and does not contain any chemical preservatives. Next, I found these Clusterbucks in Tumeric lemon myrtle flavor. They are adaptogenic buckwheat clusters that are also raw, paleo, and gluten-free. Lastly, my flax milk is a great alternative to regular milk and is a great source of fiber. Flax milk is great for heart health and helps lower high blood pressure and lower cholesterol.
Another part of my week is my Anxiety Free: Stress and Anxiety Support Supplement which helps me stay focused and balanced all day. Additionally, it is made from organic ingredients only.

And last but not least, Charlottesville's Spring days are amazing. So nice enjoying warm days with the flowers in full bloom, getting to hang outside, and this rainbow was the perfect end to the week!
